Winemaking process:
Pressing of whole grapes, and rapidly draining, fermentation at controlled temperature (16 degrees). Second fermentation in pressure vessel at a controlled temperature with selected yeasts. The filling is performed 6 months after the yeast fermentation in an isobaric bottling plant.

Sensory profile and impressions:
Light straw yellow. Very delicate floral and fruity with hints of apple and wild. In the mouth soft and fruity and dry at the same time, thanks to the characteristic acidity. The fine and persistent mousse gives a special feeling of vitality and elegance.
