Winemaking process:
Hand-picked grapes are de-stemmed and subjected to a soft pressing. The must obtained is then cooled to a temperature of 10°C, to promote its natural decantation. It is subsequently transferred into stainless steel tanks where the alcoholic fermentation takes place at a controlled temperature not exceeding 18°C. The wine is stored in tanks at a temperature of 10 °C to make it remain fresh and fragrant.

Sensory profile and impressions:
Pale straw Yellow colour with clear greenish highlights. The clear and sparkings colour recalls memories of chlorophyll, green apple, wild flowers and lime peel. Slim and slender to the palate. Not heavy to taste, dominated by freshness, closes with a citrus returns.

Winemaking process:
As soon as they arrive in the cellar, the hand-picked grapes are subjected to a cryomaceration process at a temperature of 5°C to obtain a greater aromatic and structural extraction. After the grapes are gently pressed. The juice thus obtained is decanted statically cold for at least 24 hours. The must undergoes a slow fermentation in stainless steel tanks at a strictly controlled temperature (12/14°C) that continues for about 15-20 days. The maturation continues in steel tanks, where also a long series of battonage process takes place, in order to obtain a balanced and delicately scented wine.

Sensory profile and impressions:
Wine of joviavility. Soft straw Yellow colour with greenish reflections, fragrant bouquet opening with floral notes of acacia and hawthorn, followed by aromatic herbs and citrus notes of grapefruit. On the palate it is already well balanced, thanks to frehness well mitigated by a calibrated alcohol content.

Winemaking process:
Hand-picked in crates, the grapes just arrived in the cellar are gently pressed. The must thus obtained is decanted statically cold for at least 24 hours. The must undergoes a slow fermentation in stainless steel tanks at a precisely controlled temperature (12-14 ° C) which lasts for about 15-20 days. The maturation continues 80% in steel tanks, where a long series of battonage takes place, and 20% in Barriques in order to obtain a complex, structured and delicately scented wine.

Sensory profile and impressions:
Bright straw Yellow colour. Bouquet of exotic fruits (pineapple first), golden apple, mild menthol and hints of white rose and gardenia. Dynamic on the palate, with a pleasant balance dictated by freshness and flavour on one side and alcohol content on the other. Fresh almound finish.

Winemaking process:
The hand-picked grapes from the “Camattole” area located on the slopes of Monte Cetona, are softly pressed and the wine is introduced into new oak barrels at 50% and into the second passage barriques at 50%. Here the first alcoholic fermentation takes place for about 15-20 days, followed by malolactic fermentation, during which the wine is subjected to a series of batonnage processes in oak barrels 2-3 times a week for about 7 months (to obtain a very complex and aromatic wine). Aged in bottle for 5-7 months.

Organoleptic properties
Straw Yellow colour of bright intensity. To the nose, clear hints of wild flowers, pear, cedar, marjoram and smiling puffs of vanilla emerge. In the mouth it is tasty. The taste is reinforced by a mix of freshness and subtle aroma well supported by an excellent alcohol content. Time will make it a champion of balance. Important finish with a proper taste-olfactory consistency.
