Winemaking process:
Hand-picked grapes were de-stemmed and underwent a soft pressing. The must was then cooled to a temperature of 10°C, to favor its natural decantation. It was subsequently transferred into stainless steel tanks where the alcoholic fermentation took place at a controlled temperature not exceeding 18°C. The wine was stored in tanks at a temperature of 10 °C. To make it stay fresh and fragrant.

Sensory profile and impressions:
Straw yellow colour with soft green highlights. Flavor starts out with hints of green apple, citrus fruits, pear and white flowers. Soft opening taste dominated by a lively acidity balanced by an ideal alcohol content. A fresh finish pleasantly reminiscent of citrus fruit. Pairing dish suggestion: spaghetti with clams.

Winemaking process:
To the grapes hand-picked in crates, a cold maceration is done at a temperature of 5°C at their arrival at the winery, to obtain a greater aromatic extraction and structure. After the grapes are gently pressed. The juice thus obtained is decanted statically cold for at least 24 hours. The must undergoes a slow fermentation in stainless steel tanks at a precisely controlled temperature (12/14°C) that continues for about 15-20 days. The maturation continues in steel, where also a long series of battonage takes place, in order to obtain a balanced and delicately scented wine.

Sensory profile and impressions:
Bright straw yellow colour with soft green highlights. The bouquet brings together green apple, hawthorn and acacia blossoms and musk. Rich and harmonious taste on the palate, with a soft and balanced freshness. Pleasant taste due to carbon dioxide. Pairing dish suggestion: raw fish dishes.

Winemaking process:
Hand-picked in crates, to the grapes just arriving in the cellar is made a cryomaceration at 5 ° C temperature to obtain a greater aromatic extraction and structure. The maturation continues 80% in steel, where a long series of battonage takes place, and 20% in Barriques in order to obtain a complex wine, structured and delicately scented.

Sensory profile and impressions:
On the nose citrus and fruity notes that remind of cedar bark and white peach, golden apple alternate. Growing gustatory impact, initially calm, followed by a burst of nervous acidity powered by citrus resonance. Pleasantly fruity finish.
Seafood salad, omelette with herbs, garlic and chilli noodles.
