Hand Picked in baskets, Alcoholic fermentation in stainless steel, malolactic fermentation, partly in stainlesssteel and partly in barriques (second passage). Expansion of 50% in stainless steel, 50% in oak barrels (second passage), rest in the bottle for 2-3 months.

Sensory profile and impressions:
Ruby red colour. Notes of berries, cherry and rose, closing with hints of leather and herbs. A well-balanced wine that combines flavors in harmony, making it pleasant to drink. A fruity flavor closing with hints of almond. Pairing dish suggestion: beef stew with potatoes.

Winemaking process:
Hand picked in baskets, fermented in steel tanks, malolactic fermentation in oak barrels (first passage) with stirring (mixture of noble yeasts) 3 times a week. Aging in new barrels made of fine oak for 16 months. After this rest period of 10 months in the bottle.

Sensory profile and impressions:
Intense and bright ruby red colour with soft garnet highlights.
A complex bouquet of hummus, licorice, graphite and tobacco with notes of marinated black cherries, roasted peppers and dried plums and hints of menthol and chocolate.
Full-bodied with silky tannins inviting repeated tastes despite a powerful structure. Finishes with a good persistence of fruits and menthol. Pairing dish suggestion: lepre alla cacciatora (braised hare stewed in red wine).

Winemaking process:
Hand-picked grapes are de-stemmed and undergo a soft pressing. The resulting must is cooled to a temperature of 10 degrees in order to enhance its natural clarification. It is then filled into stainless steel tanks where the alcoholic fermentation takes place at a controlled temperature not above 18 degrees. The wine is then stored in tanks at a temperature of 10 degrees, to keep it fresh and fragrant.

Sensory profile and impressions:
Brilliant pink colour with pale highlights.
A crisp and pleasant bouquet reminiscent of raspberry, strawberry, roses and aromatic herbs. Delicate and full-bodied taste characterized by freshness and soft tannins with fruit and floral notes of rosehip. Pairing dish suggestion: ham and vegetable pizza.

Sensory profile and impressions:
Characterized by an intense ruby red colour and a beautiful consistency. Black cherry jam and licorice aroma, embellished with a spiced and balsamic taste and closing with a licorice note. Soft and enveloping with dense and biting tannins. Freshness is well balanced by the ideal alcohol content. Pairing dish suggestion: seasoned Pecorino cheese from Pienza.
