Winemaking process:

Hand-picked grapes in boxes, in the area called Camattole on the slopes of Monte Cetona, the grapes that have just arrived in the Cellar are softly pressed and the wine is introduced into new barrels at 50% and 2nd passage barriques at 50%. Here the first alcoholic fermentation takes place for about 15/20 days following the malolactic fermentation, during which the wine is subjected to a series of Batonage in barriques for 2/3
times a week, (this to obtain a wine with a very complex and aromatic picture) up to a permanence in the same of about 7 months. Rest in bottle for 5 to 7 months.

 

Organoleptic properties:

Straw of bright intensity.
The nose reveals clear hints of wildflowers, abbot pear, cedar, marjoram and smiling puffs of vanilla. In the mouth it is tasty, the taste is reinforced by a mix of freshness and subtle flavor well supported by an excellent alcohol content. Time will make him the champion of balance. Important closure with the right taste-olfactory consistency.
